My Story

A few years ago, my life changed in an unexpected way. After months of unexplained fatigue, digestive issues, and constant bloating, I finally got my diagnosis: celiac disease.
I remember feeling devastated. I couldn’t eat bread—my favorite comfort food. I couldn’t enjoy pasta or traditional family meals anymore. The doctor’s words felt like a prison sentence: “You can never eat gluten again.”
But then, something shifted inside me.
Instead of feeling sorry for myself, I decided to view this as an adventure. What if I could discover new flavors? What if gluten-free cooking could be easy and delicious? What if I could prove that celiac disease wasn’t a limitation—it was just a different way of eating?
So I did what I do best: I started experimenting.
The Kitchen Failures
Oh, the failures. There were so many failures.
My first gluten-free bread was dense as a brick. It could’ve been used as a doorstop. My cookies were dry and crumbly. My pasta dishes looked… well, let’s just say they didn’t look appetizing. I threw away more food than I should admit.
But I didn’t give up.
I read books about gluten-free baking. I researched the science of gluten-free flour blends. I tested different hydration levels, different binders, different mixing techniques. I failed 10 times, 15 times, 20 times.
And then—magic happened.
On my 23rd attempt at a gluten-free bread recipe, I pulled a loaf out of the oven that was golden, fluffy, and actually delicious. My family couldn’t believe it was gluten-free. When I told my friends, they asked if I’d bought it from a bakery.
That’s when I knew something had shifted.
I perfected crispy pizza dough. I developed cookies that rivaled their gluten-filled cousins. I created family dinner recipes that everyone loved—including people who didn’t have celiac disease.
And I realized: I had found something worth sharing.
Why I Created Gluten-Free Meals
Here’s the truth: when I was first diagnosed, I felt alone.
I searched online for recipes, but many of them were either overly complicated or honestly just not good. They were “good enough”—the kind of recipes you make because you have to, not because you want to.
I kept thinking: “There has to be someone else out there who’s struggled with this. Someone who’s failed as many times as I have. Someone who understands what it’s like to want delicious food that actually works.”
So I decided to be that person for others.
Gluten-Free Meals was born with one simple mission: to share recipes that are genuinely delicious, thoroughly tested, and actually achievable—because you deserve to eat food you love.

Hi, I’m Olivia Claire, and I live in Springfield, Illinois with my family.
I’ve spent the last several years developing and perfecting gluten-free and dairy-free recipes. When I’m not in the kitchen testing recipes, you can find me reading, gardening, or practicing yoga. I’m passionate about proving that gluten-free cooking doesn’t have to be complicated.
I’m not a registered dietitian, and I’m not a professional chef. I’m just someone who learned how to make delicious gluten-free food because I had to. And now I’m passionate about sharing that knowledge with you.
